Local woman at home in the kitchen

Natchez — Most Christmas memories involve food, and Effie Mae Freeman is keeping that memory alive.
Freeman, 83, has been cooking since she got married at the age of 17.
“I got married so young I learned how to cook on my own,” Freeman said. “We didn’t know anything when we got married.”
After perfecting her skill, Freeman became a housewife with a habit. She now creates desserts, which include peanut chocolate drops, chocolate dipped fig newtons, chocolate pecan clusters, divinity, Oreo cream cheese balls and various cakes. Freeman uses her creativity in order to think of new spins on her dishes.
“Divinity is my favorite, but I love to make cakes too; they all come from scratch,” Freeman said.
Every Christmas her kitchen and freezer are transformed into a whirlwind of blenders, cookbooks and food. She begins two weeks before Christmas and does not stop until her seven children, 12 grandchildren and 12 great grandchildren have eaten her meals and desserts.
“They would rather me sit down and watch them cook, but this is my kitchen,” she said.
Her children and grandchildren share her talent for cooking, Freeman said. She also teaches them new techniques and allows them to perfect their skills.
“Everyone has the ability to cook,” Freeman said. “It’s all in doing it.”
Freeman also cans vegetables and preserves. All the produce she uses comes out of her own garden. But many of the things Freeman makes, she cannot enjoy herself.
“I am a diabetic so I do this for everyone else,” Freeman said.
And she doesn’t plan on stopping.
“I’ll cook as long as I am able to put one foot in front of the other,” she said.

As I read this story, I am reminded that my aunt by marriage would prepare a large box of various sweet treats for Christmas. I tried to make sure that I got my share, huh!
Of course, that was back in the day when I would try to eat just enough of the Christmas dinner to get permission to feast upon the desserts.
In the later years, my father and mother-in-law would make various candy treats for Christmas. You know, peanut brittle, peanut butter balls with chocolate icing, millionaires, fudge with pecans, corn toads, etc.
Now they are gone and the wife is trying to up hold the tradition. In fact, she spent most of yesterday preparing sweet treats for the rugrats and the grand rugrats.

Well, I tried making peanut brittle, the jury is still out on the quality. One thing for sure, it has peanuts. I am all ready thinking about how I would make it differently the next time.
If you give me a recipe, I immediately start thinking about how it could be better. Sometimes, I am successful with modifications and sometimes I am not. It frustrates the wife, but ..............

dixiemama, do not worry your little heart about kind comments from Buttercup.
She can continue to say kind words and NOTHING to going to happen from this end.
I am almost old enough to be her grandfather. And besides, I have about got the wife of forty years "trained" and do not want to start over trying to train another. huh!
Another to way to say it, I am happy with my wife of forty years! Hope that the wife is just as happy!
BTW, folks, the peanut brittle came out okay but a little on the thick side. I think I have enough peanuts to make a half batch.

I have seen alot of AWESOME men, but to say "I may have a crush on them" then call them awesome is a different catagory. IF I did think I had a crush on some AWESOME man the last thing I would do unless I planned on doing something about it was tell everyone.

dixiemama, I just take it as you are not familiar with gemc, buttercup, noneya, peacerulz, timn, and I. We are all pretty well on the same wave length and understand the word awesome is most of the time used in respect for one another. It is not a direct hit on trying to pick someone up. To me Jesus is awesome and boy, do I have a crush I have on Him.

((destiny))Maybe I am alittle behind the "younger generations" way of expressing myself but I still stand by my old fashioned values and think it's not respectful to say you have a "crush" on another womans husband. I was kind of surprised at this myself, truth. I don't want to throw stones, but I am sure Buttercup was not serious. She admires gemccul, she didn't really mean that she had a crush on him. Gemccul is a nice guy and he means what he said about his wife. Let's not be so quick to make assumptions.

She and I were at an office potluck and a secretary told her that I could park my shoes under her bed, anytime.
The wife has never forgotten her response: "You can have him but you get his foul mouth, his temper, his two kids, his dirty clothes, etc. When you get tired of him, DO NOT try to bring him back!

When I made reference to the wife being "trained", I did not mention that she thinks she has me "trained".
