New trick for cooking asparagus

Published Thursday, April 3, 2008

This came to me via email from local cook extrodinare Sissy Eidt. I am going to try this technique this weekend. She saw it on Food Network done by Tyler Florence. Just spray a large brown paper bag with olive oil ,toss your cliped clean asparagus with salt and pepper and in olive oil ,slice up a lemon and add a little basil {if you like] fold the bag to keep in the steam.Place on a cookie sheet and bake in a pre heated 350 degree oven for 20 min. This is for 1 lb. of asparagus. Let it rest a few min. befoe you "carefully" cut the bag open.

I would think a plastic bag would not be a good idea. I feel sure it would melt and be stuck all over your asparagus.

book paper ignites at 451 degrees. While I don't know the ignition temp of a brown paper bag, I'm sure that this coupled with the short time span are the reasons.
