Dunn optimistic about opening of new market

NATCHEZ &045;&045; Carl Dunn has a long line of things on his to-do list before he can open his new business.
Dunn hopes that Dunn’s Meat Market will open in six weeks, but isn’t sure due to construction and equipment orders.
The new shop, formerly Dunn’s Deer Market, will be a commercial smokehouse specializing in the selling of sausages and cuts of meat.
The market plans to also sell various smoked in-house meats.
Dunn, the owner of the market, said the market would also smoke commercial deer imported from Wisconsin.
&uot;We’re gonna have all kinds of meat,&uot; Dunn said. &uot;And if we don’t have it, we’ll get it.&uot;
Dunn isn’t certain if he’ll do any other special services for his market.
&uot;The more you do, the more you’ve got to do,&uot; Dunn said. &uot;It’s gonna be hectic to even do the sausage.&uot;
The market has three coolers and one freezer, according to Dunn. However, he is thinking about installing an additional freezer.
It also has a commercial smoker and processing area to prepare the various products.
On Tuesday, Dunn and fellow workers spent the day continuing to remodel the building.
They recently finished painting the trim and putting up Fiberglass on the walls in order for a cleaner environment. Dunn said there is much work to be done, but feels progress is being made.
&uot;It’s gonna take a little time,&uot; Dunn said.
The market will primarily be a family operated business, but Dunn said that he might hire extra help if it is needed.
Dunn’s Meat Market was originally opened as a deer processing plant more than 30 years ago.
Dunn said his business was generally seasonal, taking up most of his time during hunting seasons.
&uot;I’m usually busy working here 15 to 20 hours a day during deer season,&uot; Dunn said.
Dunn wasn’t clear on the market’s hours, but hopes to be available during the normal business day throughout the week.
Dunn also said he had been working on getting a retail license in order to open his business.
&uot;There are so many things you have to do to get a retail license,&uot; Dunn said. &uot;You have to go through all the red tape first.&uot;
